Lemon & Herb Ricotta Chicken Artichoke Pizza Recipe

Lemon & Herb Ricotta Sauce: A very simple (and more importantly) very delicious pizza perfect for summer but great all year. Makes 1-2 servings per pizza..
Ingredients:
- Sonoma Gourmet Lemon & Herb Ricotta Sauce
- 1/2 cup cooked chicken breast or thighs, cubed
- 1/4 cup mozzarella and Parmesan cheese, grated
- Marinated artichokes
- Fresh parsley
- Your favorite pizza dough
Preparation:
- Make or purchase your favorite pizza dough. There's no shame in picking up a few balls from your local pizzeria. We won't tell.
- Prep your ingredients. Cook and dice chicken, grate cheese, drain artichokes, etc.
- Heat the oven to 500 degrees F or as high as your oven will go. Alternatively, use a pizza oven such as an Ooni, as we did for this recipe.
- Dust your hands in flour, and separate dough into 2-3 smaller balls of dough.
- Carefully stretch out dough balls until they’re nice and thin. Perfect circles are nice, but we encourage all different shapes of pizza.
- Sprinkle cornmeal on a pizza peel or cutting board, then transfer one prepared pizza dough round to it. The corn meal will allow your pizza to slide easily, especially important when using a pizza oven.
- Add a think layer of sauce, followed by all ingredients except fresh parsley.
- Bake pizzas in the oven, one at a time, until the crust is browned and the cheese begins to brown. 10 minutes in a traditional oven, or 60-90 seconds in a Ooni.
- Slice, serve, impress your friends, and enjoy.
