Saucy Salad Recipe

This Saucy Salad layers Sonoma Gourmet Creamy Tomato Parmesan Sauce under crisp mixed veggies, topped with flakey salt for an easy upgrade to salad night. Serves 2-4 people.
Ingredients:
- 1/3 cup Sonoma Gourmet Creamy Tomato Parmesan Sauce
- 2 heads endive, leaves separated
- 2 cups baby arugula
- 2 medium carrots, shredded or thinly sliced
- 1 cup colorful cherry tomatoes, halved
- 1/2 cup assorted microgreens
- 2 tbsp Sonoma Gourmet 100% California Extra Virgin Olive Oil
- 1 tsp white wine vinegar or lemon juice
- Flakey salt and freshly ground pepper, to finish
Preparation:
- In a small bowl, whisk Sonoma Gourmet 100% California Extra Virgin Olive Oil and vinegar or lemon juice, add pepper to taste.
- Spread the Creamy Tomato Parmesan Sauce evenly on the bottom of a wide salad bowl or platter.
- Layer endive leaves, arugula, carrots, cherry tomatoes, and microgreens over the sauce, stacking for extra height and contrasting color.
- Drizzle with the olive oil dressing and finish with flake salt and more black pepper.
- Pro-Tip: Chill your plates and salad greens before assembling to keep veggies crisp and elevate the refreshing flavor and texture.
