Mini Shakshukas Recipe

Mini Shakshukas serve up bright eggs baked in Sonoma Gourmet Cherry Tomato Basil Sauce, packing bold flavor to any brunch. Serves 4 people.
Ingredients:
- 1 jar Sonoma Gourmet Cherry Tomato Basil Sauce
- 4 large eggs
- 1/2 red bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 2 tbsp Sonoma Gourmet 100% California Extra Virgin Olive Oil
- 2 tbsp fresh basil, chopped
- Flakey salt, red pepper flakes, and black pepper, to taste
- Crusty bread for serving
Preparation:
- Preheat oven to 375°F.
- Heat Sonoma Gourmet 100% California Extra Virgin Olive Oil in a skillet, add diced bell pepper, and sauté until tender. Toss in cherry tomatoes and cook for 2 more minutes.
- Distribute vegetables into 4 oven-safe mini skillets or ramekins. Spoon about 1/3 cup Sonoma Gourmet Cherry Tomato Basil Sauce into each.
- Press a spoon into the center to make a well, then crack an egg into each.
- Bake 12–15 minutes until whites are set and yolks are just a little jiggly.
- Sprinkle with herbs, flakey salt, red pepper flakes, and extra black pepper. Serve hot with crusty bread.
- Roast the red pepper and cherry tomatoes before adding for deep, caramelized flavor that elevates your mini shakshukas from tasty to totally irresistible.
